About Us
Baldwin Hill Farms is owned and operated by Paul and Bonnie Lee Yox. (In all honesty, it is owned by Bonnie Lee and Paul is her Assistant and Sugar Meister.) After retiring in 1987 and moving to Florida, we decided, in 2000, to move back to our beloved Southern Tier, where we have so many fond childhood memories of growing up. We purchased the most beautiful piece of land with an awesome view of the countryside and started planning our future.
For many years, the previous owner tapped the trees producing great maple syrup. It was only natural for us to continue this practice in our "spare time"! Paul loves being outdoors and keeps himself busy with his chores. Maple Season is about four weeks long in the spring, however, he prepares for it in various ways all year long. I love spring time in our sugar house kitchen, experimenting with new products and recipes and ways to improve our existing products.
We started sugaring in 2001, with a small wood-fired evaporator and a very small sugar shack. That lasted one season and then Paul decided to expand. We purchased an oil-fired evaporator, built a large sugar house with all the latest food-grade stainless steel equipment and began in earnest to produce the best syrup anywhere.
It is with a great sense of pride that we package and present to you our fine line of maple products for your enjoyment.
