MAPLE COOKIE RECIPES

Zucchini Maple Cookies

1 cup grated zucchini

1/2 cup sugar

1/2 cup maple syrup

1/2 cup shortening

1 egg

2 1/2 cups flour

1 tsp cinnamon

1/2 tsp nutmeg

3/4 tsp baking powder

1/2 tsp baking soda

3/4 cup crushed drained pineapple

1 cup raisins

Cream sugar, syrup & shortening. Beat in egg. Mix in zucchini & pineapple. Stir in dry ingredients. Add nuts & raisins. Grease baking sheet. Bake 350 for 12 minutes. Glaze with 10x sugar, milk & vanilla. NOTE: Dough will keep for 1 week in refrigerator.

Crackletop Maple Cookie

1 cup shortening

2 tsp baking soda

1 tsp vanilla

4 cups flour

1 cup maple syrup

1 cup brown sugar

1 egg

Cream shortening & sugar. Add egg, syrup & vanilla. Add dry ingredients. Beat well. Chill. Shape into 1" balls. Roll in granulated sugar. Bake 350, 10-12 minutes.

PEANUT BUTTER COOKIES

Mix:

3/4 cup peanut butter

1/2 cup Crisco

1 cup maple syrup

3 T. milk

1 T vanilla

Add:

1 egg & beat until blended

1 3/4 cup flour

3/4 tsp. soda

Drop by teaspoonful & bake at 350 for 8-10 minutes or until set and just beginning to brown. Remove & cool.
