Maple Sugar Desserts & Pies Recipes
WALNUT DESSERT SAUCE
Ingredients:
3/4 cup light corn syrup
1/2 cup maple syrup
1/4 cup sugar
1/4 cup water
1-1/4 cups coarsely chopped walnuts
Ice cream or pound cake
In a heavy saucepan, combine the first four ingredients;
bring to a boil, stirring constantly. Stir in walnuts. Reduce
heat; simmer, uncovered, for 25 minutes. Serve warm over
ice cream or pound cake. Serves: 2 cups.
DEEP-FRIED CHERRY PIES
1 Cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
2 table-spoons shortening
1/3 cup boiling water
1 cup cherry pie filling
Oil for deep fat frying
1/4 cup maple syrup
1/4 cup whipped topping
In a small bowl, combine the flour, baking powder and salt.
Cut in shortening until mixture resembles coarse crumbs.
Stir in water just until moisten. Turn unto a lightly floured
surface; knead 8-10 times.
Divide dough into four portions; roll each into an 8-in.
circle. Place 1/4 cup of pie filling in the center of each
circle. Fold dough over filling; secure with toothpicks.
In an electric skillet, heat 1 inch of oil to 375 degrees. Fry
pies, folded side down, in the oil for 2-3 minutes or until
lightly browned. Turn and fry 2-3 minutes longer. Drain on
paper towels. Remove the toothpicks. Serve with syrup
and whipped topping. Yield: 4 servings.
MAPLE RAISIN PIE
1 cup water
1-1/2 tablespoons cornstarch
1 cup Baldwin Hill Farms syrup
1 cup raisins
pastry for 8" pie
Combine water and cornstarch in a saucepan.
Add maple syrup and blend well. Add raisins and bring to a
boil, stirring constantly until mixture thickens, then
continue cooking until transparent, about 5 minutes.
Remove from heat and cool. Pour into pastry lined 8" pie
plate. Cover with a lattice top made from strips of pastry.
Bake at 425 degrees F. until crust is golden brown, about
20 minutes.
Maple Sugar Drink Recipes
BANANA MAPLE EGGNOG
2 tablespoons Baldwin Hill Farms maple syrup
1 small banana
1 egg
1 tablespoon sugar
1 cup milk, cold
Mix all above ingredients with blender. Makes 2 cups
MAPLE EGGNOG
1/2 cup Baldwin Hill Farms syrup
3 well beaten eggs
2 cups milk
1/4 cup brandy or rum (may omit)
1/2 cup heavy cream (whipped)
1/8 teaspoon ginger
Combine ginger, eggs, milk, maple syrup and salt, beat
until well blended. Add the rum or brandy. Pour into
glasses. Top with whipped cream.
MAPLE PUNCH
1 six oz. can frozen lemonade
2/3 cup BHF maple syrup
1 quart ginger ale
1 tray ice cubes
Empty the lemon juice into a large pitcher and stir in the
maple syrup. At serving time add the ginger ale and ice
cubes. Mix well and serve immediately. Serves eight.
NEW YORK SWITCHEL
1/2 Baldwin Hill Farms maple syrup
1/4 cup cider vinegar
1 tablespoon ground ginger
Combine maple syrup, vinegar and ginger with 2 quarts ice
water in pitcher or jug, mix well. Chill in refrigerator. Serve
cold. Good to take to the cow pasture.
Main Course & Side Dishes GLAZED SWEET POTATOES
4 large sweet potatoes
1 twenty ounce can sliced pineapple
2 tablespoons butter
1 cup Baldwin Hill Farms maple syrup
1/4 cup pineapple juice
Boil the potatoes with their jackets on until they are tender.
Cool slightly. Peel them and slice in pieces 3/4 inch
thick. Lay a slice of sweet potato over a slice of pineapple
and lay the paired slices in a flat glass baking dish.
Beat the maple syrup and the pineapple juice in a
saucepan and add the butter. Pour the liquid over the
pineapple
and potatoes and set in moderate oven. Baste often while
baking. This is an old recipe with no baking time given.
WINTER SQUASH WITH MAPLE
1 buttercup, acorn or winter squash
1 tablespoon Baldwin Hill Farms maple syrup or equivalent
maple cream or sugar
1 tablespoon butter
salt and pepper to taste or shake on some maple pepper
to taste.
Wash, peel and slice or cube squash. Cook, drain and
mash. Add syrup, butter, salt and pepper.
MAPLE BOURBON TURKEY GLAZE
1 cup bourbon
2/3 cup pure Baldwin Hill Farms maple syrup
2/3 cup ketchup
1/3 cup soy sauce
2 tablespoons finely minced fresh ginger
2 tablespoons packed dark-brown sugar
Combine all of the ingredients in a bowl and refrigerate,
covered, overnight. Brush the glaze over the turkey during
the last 15 minutes of roasting. Also, add 1/2 cup to the
Giblet Gravy to blend the flavors.
Yields 2-1/4 cups per tablespoon: 40 calories, 6 g.
carbohydrate, no protein, no fat, no cholesterol.
BAKED SWEET POTATOES WITH APPLES
3 large apples
2 tablespoons butter
3 large boiled sweet potatoes
1 teaspoon salt
1/2 cup Baldwin Hill Farms maple syrup
Core, pare and slice apples and fry in butter until light
brown. Slice potatoes. Arrange apples and potatoes in
alternate layers in buttered baking dish. Add salt. Pour the
syrup over this and dot with butter. Bake in moderate oven
(350F) about 35 minutes. Serves 6
MAPLE SHRIMP AND CHICKEN WITH VEGGIES
1/2 - 3/4 cup Baldwin Hill Farms maple syrup
1/3 cup broccoli florets
1/3 cup mushroom slices
1/2 pound shrimp (32-36)
1/2 pound chicken breast, cut up
1/2 cup carrots, julienne
1/2 cup onions, julienne
1/2 cup celery, julienne
1/2 cup green pepper, julienne
Saute veggies in a saucepan with a little oil until tender.
Add shrimp and chicken; cook until meat is almost done.
Add maple syrup and a dash of white wine. Finish cooking
and serve over rice or chow mein noodles.
